Comments: 1H: Approx. 1 lb. of butter found in door of upright freezer was found to be contaminated with beef blood. Beef must have leaked when put into freezer and dripped into ice buildup where butter then came into contact with it. Butter was voluntarily discarded and freezer will be defrosted, cleaned and sanitized before restocking. Due to the fact that corrections have been made immediately and food storage reviewed, no further actions will be taken at this time. 8A: Food stored on floor of walk-in freezer. Delivery just received according to facility manager.

Comments: 5A - Potato salad out on the line temp'd at 51 degrees. The salad had been out approx.45 min and was all finished serving in another 15 min. Discussed their proceedure and suggested puting the pan of cold salad on ice before serving starts. Second pan of salad in cooler temp'd at 45 degrees. 11A - Sanitizer strength <50 ppm in wiping bucket was made up accurately but dish soap was added to it as per their direction in a memo posted on the wall.Discussed proper method of having separate buckets for soap and sanitizer.

Comments: 5A: Traulsen Cooler reading 48oF. Used as a line cooler. Discarded approx. 1/2 gallon of soup, which read 47oF. Was out of temp for greater than 2 hours. Allowed food workers to move 2 pans of chicken casserole which were prepared today for cooking tomorrow, to the walk-in cooler. Unit recently repaired, will call repairman back. Inspector is allowing unit to be used for produce and breads (non-potentially hazardous foods).

Peppers voluntarily discarded by worker. (Corrected) 8F--Frozen turkeys found sitting in sanitizer bin of 3 bay sink thawing. Still frozen turkeys moved to refrigeration unit immediately. (Corrected)
