Reviewed cooling procedures--120°F to 70°F in 2 hrs, then 70°F to < 45°F in an additional 4 hrs. (At end of night product put into freezer for ~1 hour then moved to walk-in cooler for remainder of night to cool thoroughly.) Reheat product next morning to >165°F.
