Comments: Complaint of reusing hamburger patties from previous day. In speaking with owner, Mike Jr., this complaint is from disgrnutled ex-employee. Mike showed me mulitple text messages from the employee as well as a handbook from DQ about cooking/holding times. The only items that are discarded are at approval of ownership due to accountabily/theft. Nothing is thrown out without approval of owners. Discussed that it is possible to reserve items when cooked, cooled and reheated properly. Doing these steps would move restaurant into a high risk and not medium risk as currently marked.
