Comments: 6A: Approx. 3 dozen chicken fries were found sitting near the hot holding area near fryers, in a holding pan, but not in the hot holding unit. They temped at 75oF with inspector's calibrated thermopen. Inspector inquired if they were waste and was told that Burger King procedure manual tells them to drop pieces into oil, fry and then drain. Then they are kept at room temp for up to one hour and then if not refried in that time period for service, they are discarded. I then asked to see SOPM and State Health Department waiver for such procedure. The manager showed me the SOPM but could not find the waiver letter. I left her my card to forward letter when she found it and told her to either cook fresh per order or to cook and hothold at 140oF. She voluntarily discarded product on line and said they would cook fresh until she could find letter/waiver and forward to our department.
