Comments: Hand barriers utilized as required. Chicken patties and tomato soup held for service at temperatures ranging from 166-187 degrees Fahrenheit. Egg salad, tuna salad, hard boiled eggs and chick peas observed on salad bar at temperatures ranging from 38-45 degrees Fahrenheit. Product stem food thermometer utilized and evaluated for accuracy. Commercial dishwasher wash temperature observed at 150 degrees Fahrenheit and final rinse observed at 180 degrees Fahrenheit.

Salad bar is also offered and the following items were evaluated as follows; Cottage cheese at 42 degrees Fahrenheit, egg salad at 44 degrees Fahrenheit, and diced tomatoes at 43 degrees Fahrenheit. Both dish washer and refrigeration logs are maintained. Dishwasher operated according to manufacturer instructions; wash temperature evaluated at 153 degrees Fahrenheit and final rinse temperature evaluated at 180 degrees Fahrenheit. Hand barriers utlized as required. Sanitizing solution prepared with wiping cloth(s) adequately stored, discussed obtaining test ki for purpose of evaluating sanitizing solution concentration.
