Discussed the cleaning routine for the floors and walk-in coolers. Operation is contracted with Orkin. Restroom adequately maintained clean.

Improvements have been made regarding cleanliness of base and shelving within refrigeration units. All food product observed to be stored off the floor as required. Gasket on door of Bev Air refrigeration unit has been cleaned; replacement gasket is on order. Food preparation sink is clean and maintained for it's intended purpose. Improvements observed regarding exterior of equipment; discussed routine maintenance and identified additional areas needing improvement. Discussed storage of mop pails and grease cleaning equipment: improved storage and organization is required. New ice scoop holder has been ordered for rear ice machine. Facility has a newly assigned manager who has recently been transferred from Cazenovia McDonalds.

All hot holding and cook temps observed at adequate proper temps: hot holding: grilled chicken, 152F, quarter pounder, 166F, crispy chicken, 158F, McChicken, 177F, and grilled chicken cook-temp, 195F. Discussed the future new incorporation of uncooked chicken strips/fingers into the operation; chicken will arrive frozen, then get thawed, and then cooked and held for a certain amount of time. Discussed cleaning schedule for the top of the french fry machine. Improved cleanliness was observed during this inspection.

Dining room waste receptacles are maintained. Observed improved maintenance of kitchen floor and walk-in refrigerator/freezer floors. Corporation monitoring devices utilized for holding of lettuce, onions, and other time/temperature controlled food items.
