Discussed plan to finish the ceiling in the kitchen, and cleaning routine and schedule for the cookline equipment. Dishwasher is serviced quarterly. Discussed with owner/operator, the future adoption of the FDA food code: cold holding temps will be 41F. Restrooms adequately supplied and maintained.

Comments: Fisher Bay Restaurant re-inspection: 1) a new bucket storage shelf was installed for the ice buckets at the ice machine, 2) a new dishwasher thermometer was installed, temps measure and observed adequate, rinse observed 130F, 3) table mounted can opener was found clean, 4) significant cleaning occurred to the floors, walls, ceiling and equipment; the wall behind the cook-line and the hood and vents were professionally cleaned, and sheetrock was installed over the damaged ceiling in the kitchen, but still needs to be taped and painted. The penetration and ddoor jams to the walk-in cooler has been encased/enclosed. The ceiling exhaust fan was deep cleaned, and the wall exhaust fan was replaced. Fisher Bay is now connected to West Sullivan Sewer district.

The dining room was closed to customers at the time of inspection, but the kitchen staff was present prepping for dinner. There was a sign posted that the owners will reopen after they return from welcoming their new baby grandson. Congratulations! Observed and discussed the reheating and holding procedures, temperatures adequate. Cold holding prep cooler(2) items temps. adequate; cole slaw 41F, mashed potato 40F. The shelves along the cookline have been cleaned since prior inspection. Discussed re-inspection and creating a schedule of required repairs. Hair restraints and hand barriers utilized.
