Comments: Field Visit to discuss disposition of confirmed norovirus outbreak illness investigation dated 12/18/2016. The investigation concluded that the outbreak was not foodborne in nature due to inconclusive evidence. In light of the investigation; the following is a list of Department of Health recommendations: - Maintain mechanical dishwashing unit in proper operating condition and validate sanitizing cycle daily. - Ensure proper hand washing and glove use procedures by all employees. - Ensure thorough daily cleaning and sanitizing of all surfaces throughout the facility including the kitchen and restrooms with an attention to hand contact areas. - Ensure that food placed out for buffet during special events is maintained under temperature control if necessary. - Ensure that all ingredients are thoroughly chilled to 45 degrees F. prior to assembling into cold salads. - Review ill food worker standards with employees to highten awareness of the potential for spreading disease when experiencing symptoms of disease or caring for an ill person.
