Comments: Comment: Comment: Items checked during inspection included accuracy of food probe thermometer, proper cold holding of refrigeration units, availabilty of fully equiped handwashing in food prep area, use of barrier when handling "ready to eat" food, proper concentration of sanitizer for wiping cloths, proper sanitizing by dishwasher, proper food storage and general sanitation. Cafeteria serves for two hours. However, food is placed on hot holding in shifts to accomadate the waves of students coming to cafeteria at various times throughout the lunch period. Menu served on day of inspection included waffles, Baked chicken, sweet potato fries, canned oranges and milk. Discussed covering food items that have cooled below 45F first thing in the morning instead, of leaving uncovered all day with kitchen manager.

Comments: Comment: Inspection involved verifying accurracy of food probe thermometers, check for proper hot and cold holding, availability of handwashing where food is prepared, proper concentration of sanitizer for wiping cloths and dishwasher and general sanitation. Menu served on day of inspection included: Nachos with meat sauce and cheese, refried beans, chopped onions, tomatoes, and black olives, corn, pineapple, grapes and milk. Serving time goes from 10:45 to 1:00. Discussed cooling process of chili that was found in walk-freezer with kitchen manager. Thawing occurs in the walk-cooler the day before serving. It was learned that cafeteria facility occasionally cools large volumes of food. Kitchen manager appeared to have a solid understanding of proper cooling.

Comments: Comment: Menu served was the same as that served at the other three cafeterias (nachos served with meat sauce, refried beans, cheese and vegetables) . All food served to the Intermediate students is prepared onsite at this kitchen. Accuracy of food thermometers was verified in ice bath, proper sanitizer concentratipn was checked, proper hot holding on serving line was also verified, itchen looked clean and organized and all food handlers appeared healthy.
