Comments: No violations observed during inspection. Observed functional thermocouple. Shredded mozzarella cheese in pizza make unit had a temperature of 41F. Sliced ham in same unit had a temperature of 38F. Meat sauce is pizza make unit had a temperature of 41F. Chopped hard boiled eggs stored in plastic container within commercial refrigerator behind cash register at a temperature of 41F. Observed waiver for all potentially hazardous time/temperature controlled for safety pizzas being followed correctly, labeled with discard times on clocks. Gaskets of all cold holding unit were sealed and in good condition. Discussed facility's dish washer was changed from chemical sterilization with quaternary ammonia to heat. Per area manager, dish washer was fitted with booster heater to heat water to 180F to adequately sanitize dish ware and utensils. Observed rinse cycle reach 180F per dish washer analog thermometer. All sanitizer (quaternary ammonia) buckets evaluated at 200 ppm per facility test strips.

Comments: Facility has operation thermocouple. Observed staff breaking down pizza bar and discarding TCS (time/temperature control for safety) pizza during 4 hour discard time per hot holding waiver requirements. Temperature of shredded cheese in cold holding buffet line was 44F. Diced hard boiled eggs on buffet line had a temperature of 42F. Observed shredded cheese in pizza make unit at a temperature of 34F. Sliced pepperoni in same unit was 41F. Shredded cheese in stand up commercial refrigerator near cash register had a temperature of 38F. Observed adequate lighting in walk-in dough storage cooler. Observed clean baffle inside facility's ice machine-corrected from previous inspection.

Advised to have lightbulbs in back walk in cooler area to be brighter. Discussed ill worker policy. Adivsed immediate placement of leftover pizza to be donated from buffet into commercial refrigeration/freezer to rapidly cool. Advised to keep shredded cheese and other potentially hazardous foods in salad bar to be placed at lower levels in wells, in order to help maintain temperature of foods at or below 45 F.

Comments: Observed accurate thermometers in cold holding units. Obtained a sanitizer (quaternary ammonia) level of 100ppm in dish machine with with facility test strips. Discussed hand washing and ill food worker policy. Discussed that facility uses a food grade plastic bags to hold dough and to cover salad bar toppings that are being stored in walk-in cooler.

Comments: Interview with manager indicated that facility policy is to keep breadsticks, pasta and dessert pizza for 40 minutes and other pizza for 20 minutes out on buffet line. Discussed state wide wavier allows for pizza to remain out on buffet line for up to 4 hours. Pasta is not on state wide wavier. Pasta was temped at 170dF at time of inspection. CCHD to discuss pasta on buffet line with operator. Observed temperature logs. Observed employee using sanitizer test strips (chlorine) to verify strength in new cleaning cloth bucket.
