Comments: A Time Table of Compliance Date of March 22, 2018 has been established to correct violation listed above. A re-inspection will be conducted after this date to determine compliance. Kitchen was not in use during inspection. Numerical thermometers available for evaluating cooked potentially hazardous (TCS) foods. Monitoring thermometers available inside refrigerated equipment used to store cold potentially hazardous foods. Per Bartender, kitchen is not in general use during the week, only for occasional dinners or special events.

Comments: Conducted a re-inspection due to violations noted on previous inspection report of 2-27-17. A revised TTOC date of April 6, 2017 has been established to install section of missing cove molding in men's rest room (near rear entrance hallway). Kitchen floor below deep fryers clean, Operator has purchased replacement sanitizer test kit (Chlorine). No single-service paper products stored on floor in dry storage room off kitchen. Except for missing cove molding in men's rest room, other previous violations corrected.

Advised surrounding metal inserts containing potentially hazardous/time & temperature controlled for safety (PHF/TCS) foods (meats, cheese, dairy, eggs, rice, noodles, cooked vegetables, cut tomatoes, etc.) with ice, not to store on top of ice. Discussed reheating to 165F within two hours for any PHF/TCS foods which are to be hot-held. Mail copy of inspection report to facility and include food safety summary sheets for volunteer kitchen workers.
