Interview with operator reveals that plans are underway for significant BOH remodel, including wiring and ceiling surfaces.

Comments: 5B. Gravy cooling without a shallow container in walk in cooler at 110 degrees F, 10:30am. Interview with cook revealed that it was placed in cooler at approximately 8:30am. Pastic wrap was removed, separated into two smaller containers to reduce temperature in a shorter period of time (corrected at TOI). Re-inspection next week. 11B. Sanitizing solution not used for holding wiping clothes. 11D. Some lighting in kitchen not shielded or shatterproof. Light in walk-in cooler not shielded or shatterproof. Lights in kitchen are dirty.
