Comments: 5B. Turkey roast not cooled using an appropriate method. Must be quartered and cooled in the walk-in cooler (120 degrees to 70 degrees F in two hours and 45 degrees F in an additional two hours). This particular roast was roughly 6 pounds and I believe it was satisfactorily cooled. 8A. Gravy stored in walk-cooler inside 5 gallon bucket containers. Process needs reviewed with operator to determine how gravy is cooled, quantity or shelf life, and regardless another container for storage should be used. 10B. Steam container for hot holding has excessive build up and dirty water. Unit needs thoroughly cleaned or replaced. 11D. Microwaves and stove top (s) not clean. Wall next to stove has duct tape and is falling apart - not a cleanable surface. Hood above fryer is not clean (dripping grease). 11D. Compressor (?) above stove dripping grease down wall. 12C. Three bay sink doe not have an appropriate faucet. 15A. Floor in utility room with ice machine is not cleanable - concrete in disrepair, boxes on floor, water on floor. 15B. Lights in cooking area not shielded or shatterproof.
