Comments: Discussed CSEA prime rib dinner, serving buffet style, cooking procedures, no food will be cooled and saved. Thermometers were calibrated on site and found to be accurate. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold and hot holding temperatures were found to be acceptable. Cooling logs are also recommended to ensure food is cooled from 120 DF to 70 DF in 2 hours and to 45 DF in an additional 4 hours. High temperature dishwasher was working properly. Digital thermometer was accurate.
