Provided food safety summary sheet and time and temperature control for safety/potentially hazardous food (TCS/PHF) sheet. Discussed maintaining equipment to prevent red violations (plugged condensate waste line). Reviewed tcs/phf and the requirement to cold hold sliced tomatoes and cheese (blue crumble and sliced American). Recommended re-chilling tomatoes prior to slicing.
