Observed temperature log. Site picks up lunches at 11:30 but doesn't serve until 12:00. Since lunches are out of refrigeration for 1.5 hours, discussed keeping ice pack on top of lunches and lid to cooler closed whenever food is not being served and taking a second temperature reading at 12:30. | ||

Item 11C: Food contact surfaces not washed, rinsed and sanitized after each use and following any time of operations when contamination may have occurred Comments: Facility did not received their folder with temperature log, probe thermometer and gloves with their delivery of lunches. Facility had placed a call to prep site to obtain folder and was not planning on serving food until it arrived. Sanitarian temped milk at 40dF which was recorded so that lunches could be served. Facility serves lunches from 12-1:00pm. Only 1 ice pack is in cooler with 15 lunches. Discussed taking a temperature more than once to verify cold held phf/tcs items are 45dF or less prior to service. |
