Very minimal amount of product sold - only one roll cart used for baked goods to be sold. Operator not on site at time of inspection. Spoke with operator's wife, Ingrid, throughout inspection, who stated that they no longer bake any product on-site because they no longer have a baker, so they purchase their baked goods from another bakery elsewhere (location unknown) to sell on-site. Observed a stew cooking in a crock pot in the back kitchen area; however, Ingrid stated that the stew was for personal use only and that the back kitchen was not used to prepare food to be sold. // Discussed proper dish washing method in that dishes are washed, rinsed and then sanitized in three basin sink. // Ingrid inquired about the process of increasing their menu to include foods other than just baked goods. Requested that operator provide a written statement (by letter or email) of the foods that are proposed to be served. Prior to storing and preparing any foods on-site, a stem-type product thermometer must be available for use. |
