Comments: No foods observed to be stored out for service nor on buffet line in dining area. Discussed with manager that occasionally trays of food are placed out on tables for guests during private parties. Discussed that foods would be held on sternos or on ice baths. Hot-holding: Chulent: 180+F - ok. Observed approximately 15 full jugs full of waste cooking oil and a large vat filled with approximately 300 to 400 gallons of waste cooking oil, stored on the backside of the facility. Manager, David, demonstrated that he has made at least 8 phone calls to two oil collection companies to have oil removed, but that to date they have not arrived for pickup. David stated that his latest phone call the oil collection company was made this morning.

Comments: Two old fire extinguishers discharged. Operator removed from kitchen area. Facility has had a thorough cleaning and was in good condition. Thermometers present, walls painted, floor dry, garbage behind building was limited to cardboard, cutting boards in good condition, coke cooler clean, floors clean, all lights shielded, and restroom in good condition.
