Kitchen 3-bay sink has indirect drain under kitchen floor in basement. Two residential freezers are located in the basement to store food for service. One residential refrigerator and one residential freezer are located in the kitchen. Cold holding temperatures: sliced American cheese 40°F, shredded mozzarella 43°F. Hot holding temperatures in electric turkey roaster set up as stream table: wing sauce - butter garlic 173°F, honey garlic 174°F, barbecue 164°F. Hot holding temperature in residential crockpot: gravy 165°F.

It is recommended that a more easily cleanable floor be installed in the walk-in cooler (i.e. snap together floating vinyl flooring or similar - something that can withstand moisture and colder temperatures. Recommend that you get a digital thermometer for use in monitoring cooking temperatures.
