COMPLAINT APPEARS TO BE UNFOUNDED.

Comments: Chlorine residual at the 3 bay sink is found to be 2.0 mg/l at 2:30. Temperatures taken of food items and in refrigeration were found acceptable unless otherwise noted. Notes: The salad prep station cooler has been replaced with a new Leader unit with three doors on bottom and two compartments on top. Additional unit was of same type also purchased but yet in use. Walk-in cooler has raw foods stored only on bottom shelves with cooked foods over top. Cooked meats are cooled on speed rack before being packaged into portions, large meats are cut into portions of less than six pounds. Operator has contract with approved outside pest control operator. Two new hot holding units have been purchased, only one currently in use, Advant Co brand.
