Discussed at length with Max and Stan having an approved scheduled process or statewide waiver for their sushi rice. Scheduled process where their sushi rice is considered a non potentially hazardous food and they have documentation from an appropriate processing company, pH meter, calibration soultions etc. Option 2 is a statewide waiver for time as a temperature control since they have locations in multiple counties and they would need to contact Darby Greco from NYSDOH.
