Comments: Advised operator to cool potentially hazardous foods rapidly. Observed operator place a covered pot of pork stew that had been on the stove at the beginning of inspection into the walk-in cooler. The pot measured approximately 14 inches in diameter and 8 inches in height. The pork stew temped between 120 and 132 degrees F. Upon request, the operator brought the covered pot back into the kitchen, divided its contents between two shallow insert pans, covered the pans with plastic wrap (because the walk-in is located outside), and place them back into the walk-in and remove the plastic wrap for them to cool rapidly.
