Comments: 6a & 6b. At 1340, using inspectors calibrated food testing thermometer, temped chili (94 dF) and Au Jus (136 dF) that were being held in a 3 bay crock port. After speaking with operator it was determined that the items were heated to above 165 dF and place in hot hold unit at 11:00. Operator voluntarily discarded approxmately 2 qts of chili and 2 qts of au jus. (CORRECTED) Hot hold unit is in disrepair and will be replaced. 10b. Mildew build up on ice machine near bar.

After speaking with chef it was found that the items had been reheating for 1 hour. Chef placed items on stove and reheated to 165 deg F. CORRECTED 8a. Unmarked zip-lock bags of meat products in True cooler. Corrected, 8a. Canned goods stored on floor in dry storage. 10b. Shelves behind line not smooth and easily cleanable. 11b. No sanitizer bucket available at time of inspection. Corrected. 15a. Walss in pizza room and wall under urinals in mens room not smooth and easily cleanable. 15b. Lights not shielded: near 3 bay sink in kitchen, dry storage, bar dry storage, and beer cooler.
