Comments: Per interview, staff were using the sink with the indirect drain as a mop sink and the adjacent sink for food perpetration that does not have an indirect drain. Provided education, sink with the indirect drain should be used for food preparation. Before using the sink with the indirect drain for food preparation, please disinfect the sink. Using Time as a Public Health Control was discussed with the operator and issued the operator a waiver application. All violations must be corrected and are subject to enforcement action.

Comments: Comments only: 1. Several deserts located in small desert cooler at front service area were temped using a metal stem probe thermometer at 45°F. As precaution, staff removed all items from this cooler that require refrigeration for food safety purpose and placed in different cooler. Small amount of ice present on inside back portion of this cooler may be causing cooler to operate inefficiently. Cooler was unplugged and will be defrosted. Staff also moved temperature control dial from a 3 to a 5 setting. Once this cooler is placed back into service, please monitor to ensure food temperatures remain at 45°F or less. 2. Covered container of cooked diced potatoes stacked approximately 5 to 6 inches high located inside walk in cooler were temped using a metal stem probe thermometer in range from 48 - 50°F at 3:15PM. Per interview with staff, potatoes were cooked earlier today around 10:30AM. To ensure potatoes reach proper temperature within the allotted cooling time frame, staff placed diced potatoes, uncovered, on sheet trays. Provided proper cooling education to employee, Paige Ellis. 3. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.

All refrigerated foods are stored properly. The Ansul system was inspected July 2014, less than one year, good. Bleach water sanitizer tested 100 ppm, good. Very clean organized operation.
