Both thermometers recalibrated at this time. 4B- Can of Dole pineapple juice stored open in bar cooler, due to black discoloration on the top- discarded. 5B- Curry chicken at 68 degrees in walkin cooler- per food prep worker- chicken made at 8 pm last night (10/13/2011)- not cooled properly - chicken discarded at this tgime. 6A- Steamed cabbage at 124 degrees, chicken/ broth- 144 degrees, chicken pieces at 110 degrees- due to time factor < 2 hours- all above reheated to 165 degrees, hot held at 140 degrees. 8A- Some rust forming on top of the ice machine- condnsation occurring. 12C- Three bay sink faucet in disrepair. 8D- Single service towels not dispensed in the kitchen at the handwash sink and mens room- bar area. 15B- End caps missing- light fixture over three bay sink. |
