Comment only: in interview with employee about steps in washing dishes, it was noted that a new towel is used sometimes to dry dishes after they come out of the dishwasher and that the same towel is used throughout the day to dry dishes until the towel is determined as soaked and then it is thrown out. Dishes must be air dried every time that they are washed, rinsed, and sanitized.

Comments: No violations observed at time of inspection. All cold and hot-holding units are maintaining adequate temperatures. Facility is very clean and organized. Notes only: 1. Inspector arrived just after lunch rush and observed a dirty wiping cloth lying on a counter that the chef had just been using to clean the counter top—chef was aware of the requirement before inspector mentioned it. Please ensure all dirty wiping clothes are always stored in sanitizing solution between uses. 2. Several containers of food were observed to not have lids on them at the time of inspection. Chef Terri states that she takes the lids off during lunch rush. Please ensure lids are kept on containers, particularly in the walk-in cooler. For example, two black bus bins full of French onion soup and pasta sauce were uncovered. Several food items were located above these bins, allowing potential for contamination. No contamination noted at time of inspection.
