Comments: Hot hold temps satisfactory: chili = 165 degs; mixed vegs = 191 degs; egg salad = 34 degs. Discussed proper cooling of Swedish meatballs should use less than 4 inch pans, and do not cover with anything including plastic wrap, and must stir until cold 45 degs, then you can cover. Gave cooling and reheating brochure and a CCP cooling worksheet. Very clean. I will schedule a HACCP for a later date and call Cathy Linkous. | ||

Comments: No problems noted, very clean and well organized. Popcorn chicken = 185+ degs from oven and 157 degs in warming oven, steak fries 193 degs out of oven, coleslaw = 39 degs, diced tomato 36 degs, diced peaches in s.s. cups = 43 degs. A 2nd inspection HACCP will be scheduled in next few weeks . Dishwasher used for food trays only and does reach 170 degs in final rinse: if you can get final rinse up to 180 degs you can use machine for kitchen utensils and pans. Students use disposable plates and dinner wear. | ||
