Comments: Observed accurate probe thermometer. Sour cream in homestyle refrigerator had a temperature of 45F. Recommended staff to lower temperature of homestyle refrigerator to below 45F to allow adequate cold holding of TCS foods. Meat sauce in crock pot had a temperature of 189F. Walk-in cooler located in basement of facility is no longer in use, and mostly used as storage. Discussed proper procedure for serving garnishes using utensils or wearing gloves to prevent barehand contact. Observed test strips for sanitizer (quaternary ammonia).
