Comments: discussed handling of pork butts for pulled pork. Butts are smoked to an internal temperature of approximately 190-200 degrees F. they are rested in the smoker for approximately 1 hour prior to beginning the pulling process. The butts are temped after removal from smoker, typically with an internal temperature still in the 140-165 degree F range. The fat cap is removed and the butt is broken into chunks to cool prior to shredding (approximately 20 min time) during which the meat cools to approximately 115 degrees F. The meat is pulled and placed in shallow pans, uncovered and transferred to the cooler to finish rapidly chilling. All cold holds and hot holds adequate during inspection. Bar area is using an ice holder with a false floor, eliminating contact with the soda chill plate. The bar staff is using a stainless cooler on legs (ice and beer holding only), discussed periodic monitoring and draining as necessary to limit product contact with melt water.
