Discussed that if food storage is moved under sewer lines in basement gutters would be required. Time as public health control form was emailed.

Comments: Satisfactory cold temperatures observed. Some hot foods observed are holding above 140 F. Ministrone soup observed heating in steam table at beginning of inspection is 60- 89 degrees f. Owner states soup has been reheating 20 min. Soup temp 30 minutes after initial inspection observation 99- 145 degrees F. Owner voluntarily removed items from steam table that are reheating to reheat to 165 F on stove and check temp. Steam table water was 165 F at time of removal to stove and could not be certain that required reheat temperature would be met. Owner will use higher setting on steam table or reheat items on burner or microwave to make certain reheat > 165 F before holding hot > 140 F.
