Comments: 2C - At 11:10 am these inspectors found raw eggs and raw beef stored over ready to eat foods in walk-in cooler. Chef rearranged foods and corrected. No cross contamination observed. 5E - At 11.45 these inspectors found approximately 10 lbs of mashed potatoes that, using inspectors calibrated food testing thermometer, to be temped at 47 degrees F. After speaking with chefs, it was determined that the potatoes were made yesterday and placed in cooler. Given the size of the container it was determined that an improper cooling method was used. Chef voluntarily discarded and corrected. 8A - Cans of drinks stored on floot in bar,plastic squeeze bottles in kitchen not labeled, foods stored on floor throughout, open bags of products stored unprotected. 8E - No thermometers found in Turbo air cooler and line cooler. 10B - Metal shelving in Vinco cooler, drystorage and line cooler are not smooth and easily cleanable. 11D - Food debris found in microwaves,freezers, shelving throughout 12C - Indirect drains appear to be clogged. No available mop sink. Operator states that mop buckets are dumped outside. 12D - Toilet in men's room inoperable.

This inspector had worker discard worker discard pickle and pickles in reach in and corrected - discussed glove use 9c- food prep worker not wearing a hair restraint- corrected 8a- in upstairs storage room - box of pasta, styrofoam containers, and bag of flour on floor moved and corrected 5b- at 1240pm this inspector found a large 10 pound roast in walk in cooler- per the owner it was cooked yesterday. Owner voluntarily discarded and corrected and denatured . Discussed proper cooling procedures and corrected. 2c- at 1250pm this inspector found farmers cheese and Mexican cheese next to the raw products with blood on the packaging. Owner sanitized cheese packagings and moved them and corrected 15b- 2 lights in pizza oven room are not shielded- also fan unit in room has debris on it corrected 12c- faucet at bar leaks and also leak under plumbing at bar into plastic bin corrected
