Comments: Upon inspection, black bean mixture in steam table only 99 deg F to 137 deg F (140 deg F after stirring)--Head Chef Ef indicates beans reheated in microwave this morning to 135 deg F and put into steam table--Mixture voluntarily discarded. 10 qt. pot of black beans found in reach-in 3/4 full. (Rim at top of pot indicates pot was previously filled to top.) Head Chef Ef states beans were cooled in same pot. Although beans were found to be acceptable temp of 39 deg F it is believed by health inspector that improper cooling took place--beans voluntarily discarded. |
