Cold hold deli unit sliced tomatoes 41 degrees F, sliced cheese 43 degrees F, cut lettuce 43 degrees F, walk in cooler stock pot soup 41 degrees F, roast turkey 40 degrees F, beef roast 41 degrees F, Good. Proper cooling was observed and was discussed. A choking poster & CPR equipment are available. The metal stem food probe thermometer tested 32 degrees F Ina 32 degree F ice water bath, accurate. A metal stem probe thermocouple thermometer is recommended for this level of operation.
