Comments: Comments: 1. Prepared sushi rice is left out at room temperature and facility does not have a waiver to use time as a public health control. There is a pH meter and an up to date logbook with records showing pH readings of prepared sushi rice. Explained waiver process and using time as a public health control with manager, Nicole Perratto. Must apply for a waiver as soon a possible. Use of pH meter and recording pH in logbook is no longer acceptable for holding prepared sushi rice out at room temperature. Prepared sushi rice cannot be held out at room temperature without an approved waiver from the NYS Health Department to use Time as a Public Health Control. 2. Air temperature recorded inside 2-door cooler at sushi prep area was 48°F. All food items checked using a metal stem probe thermometer in this cooler were recorded between 42 - 44°F. Please monitor this cooler closely to ensure food temperatures at kept at 45°F or less at all times. 3. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.
