Item 5B (Critical): Potentially hazardous foods are not cooled by an approved method where the food temperature can be reduced from 120oF to 70oF or less within two hours and 70oF to 45oF within four hours. Item 7A (Critical): All poultry, poultry stuffings, stuffed meats and stuffings containing meat are not heated to 165°F or above. Item 2E (Critical): Accurate thermometers not available or used to evaluate potentially hazardous food temperatures during cooking, cooling, reheating and holding. Comments: The original purpose of the field visit was the complete a HACCP on the Turkey Gravy. However, due to the severity and number of public health hazards observed during the course of the HACCP, the HACCP was halted and an inspection completed. Education was given and assistance with corrective actions provided. Review of the facility's operations indicate that the facility operates more than 14 times in a calandar year. However, the facility typically only has one large harvest dinner wvent where 750 persons are expected to be served within a 6 hours. Complex food items prepared fo and served during this dinner are: 1. Turkey Breast and Thigh, boneless: raw, cooked, cooled, cold held, reheated, hot held, discarded 2. Turkey drippings forstuffing: Cooked, cooled, cold held, reheated and combined with stuffing, cooled, cold held, reheated, hot held, discarded. 3. Turkey drippings for gravy: Cooked, cooled, cold held, reheated with gravy mix, hot held, discarded. 4. Pureed Squash: Cooked in the bag, cooled, second batch added on to cooling mass and mixed with sugar and butter, cooled, cold held, reheated, hot held, discarded. 5. Coleslaw: Vegetables cut by employees, cold held with commercial dressing, combined, cold held, discarded. obervation of the serving line indicated that the food is not adequately protected during the service from potential comtamination (no consistent cover use, no sneeze guards, patron self service). Food served to the public in this manner must not be reserved and must be discarded. All violations must be corrected and are subject to enforcement. |
