Comments: The new kitchen manager was able to have staff demonstrate hand washing, use of sanitizer, and thermometers. A posting of temperature guidelines was given. Staff were receptive to learning food safety requirements. A strong warning about bare hand contact of ready to eat foods was given using the posting warning about required enforcement with fines.

Comments: This reinspection was successful because a responsible and cooperative permit owner/operator took quick and effective actions to correct the items witten on 12/13/17 inspection report. The owner/operator scheduled himself to be ready to facilitate this impromptu inspection of his staff. Manager/Cook was able to demonstate improvements and show an understanding of health department requests and requirements.

Comments: This was the second 2017 routine inspection. At both inpections, the cook became hostile and non-coperative when asked questions about daily proceedures, especially questions about a foods preperation and handling history. The communication needed to get all the information needed to do a complete inspection was not possible. At both inspections, cook Jason swore at the inspector, expressed his hate of inspections, and created conflict with the inspector. This inspection was aborted early to avoid conflict esculation. The reception of this report was completed with a manager at "Hobies" in Plattsburgh. He stated he works for Soubhi "Ziad" Sassine, the owner/operator of "Hobies Annex". A schedule for correction, training, and reinspection by end of year was discussed and agreed on.
