Comments: During the course of the inspection proper cooling of thick soups and other potentially hazardous food items was discussed. The owner stated that they cook, cool and re-heat several items such as: Chili, Beef Barley soup, Beef Gravy, meat loaf, and several other home style soups. The low temp dishwasher measured 148F and utilized the low temp chlorine sanitizer. Glove by the food service workers was adequate with changing when soiled. Hot holding was 157F and above, Cold holding was 41F and below. Reviewed the use of thermometers for evaluating hot, cold and cooked temperatures at regular intervals.
