Temperatures of potentially hazardous foods are checked upon arrival by school staff and recorded on daily menu logs. Facility has recently obtained 2 table-top steam units to ensure delivered foods are hot-held at proper temperatures of at least 140F, whereas the previous hot-holding method via the use of a Cambro box was not effective for long-term holding. One of the 3 lunch periods has been eliminated for this school year, decreasing the hot-holding time at the facility. Therefore, the previously implemented Time as a Public Health Control Waiver will no longer be necessary for facility adhereance. Acceptable temperatures: milk in RIC @ 37F, delivered hamburger patties @ 147F upon arrival.
