This was discussed with the cook and milk will be recorded on the delivery logs from this point forward.

As per discussion with the operator, and the sign on the front of it, the residential dishwasher is always run with the sanitizing cycle engaged. All temperatures measured with a DOH thermocouple were within acceptable ranges.

Comments: Residential dishwasher unit was installed without DOH approval. This unit does not reach high enough temperatures to run on any other cycle besides Sanitize. Thus, dishwasher must always be run on Sanitize cycle. Proper cooling and reheating methods were discussed with operator for a 10 lb. turkey breast was being cooked, and then cooled to be reheating for lunch in 2 days. Today's menu was checked with a DOH thermocouple: sloppy joes sauce- 175 degrees F, cooked green beans- 172 degrees F, baked potato wedges- 190 degrees F.
