Proper cooling and reheating methods were discussed with operator for a 10 lb. turkey breast was being cooked, and then cooled to be reheating for lunch in 2 days. Today's menu was checked with a DOH thermocouple: sloppy joes sauce- 175 degrees F, cooked green beans- 172 degrees F, baked potato wedges- 190 degrees F. |
