Comments: The bar 3 bay was set up properly and all cold holding temperatures were appropriate. The dishwasher does not have a sanitization cycle. Per interview with the operator, cups are washed in the bar 3 bay, paper plates and disposable utensils are used for food. Any non-disposable food service supplies run through the dishwasher must be sanitized and air dried. A sanitizing dishwasher (150 degrees F wash, 180 degrees F sanitize) should be purchased in the event it needs to be replaced.
