Coffee milk temped at 43 degrees and 1/2 and 1/2 temped at 42 degrees at concession. All coolers in concession stand adequate temperatures. Chlorine residue measured adequate and daily records being kept by maintenance. Prep station cooler upper compartment thermometer reading 50 degrees; sliced tomatoes temped at 38 degrees. Discussed two hour window for products in cooler and Liz stated that they are used very quickly and within the two hour window. Bottom compartment of prep cooler adequate temperature; chicken salad made from pre chilled ingredients temped at 42 degrees. Gloves available and being used properly. |
