Comments: Talked to Jean and the chefs in the kitchen about their use of shell egga. They all stated that they are only taking out the trays of eggs as they are being used. When questioned about the length of time it takes to consume a tray of these shell eggs, they said that it is about 45 minutes to an hour from the time the eggs are removed from the cooler until the time the last egg in the flat is used. Two trays were on the counter, one containing 4 eggs and the other a full flat. The full flat was put out at about 11:50 AM and the four egg flat at about 11:05 AM. The time of inspection was 12:05 PM. Discussed frequency of cleaning the meat slicer with Jean. Report emailed. | ||
