Probe thermometer will be obtained and operator will notify this office as soon as a new one is obtained. Facility was closed at time of inspection. Owner allowed inspector access for inspection. Mop sink adequate. Education given on all deficiencies. All violations may result in enforcement. Discussion about hand wash sinks in the bar and kitchen areas. Owner will designate the hand wash sink in 3 bay of kitchen; as discussed. As per discussion, fresh produce will be washed in sanitize bay only.

Comments: Discussed deficiencies with the operator. The Bar Cooler Air Temperature was measured to be 35 degrees F and the Air Temperature of the refrigerator compartment on the refrigerator/freezer is 34 degrees F. Taco Meat was measured at 119 to 121 degrees F. The operator immediately put this meat back on the stove and reheated it to 171.2 to 173.4 degrees F. This Taco Meat had been held in the Crock Pot for about 60 minutes. Strongly encouraged the operator to make sure that this food item is held at 140 degrees F or higher. Diced tomatoes were measured to be at 46.9 to 47.7 degrees F. Report e-mailed.
