Hot hold tomato sauce next to grill at 140 degrees Fahrenheit. Hood over grill was greasy but not out of the ordinary or excessive. Stab thermometers available. All coolers cold enough even though some were missing thermometers.

Observed proper reheat procedure being implemented for marinara sauce prior to transferring to steam table - ok.
