Discussed with owner the importance of proper hand washing after doing any work other, or working with raw foods and then doing any other job in the kitchen, and the importance of regular cleaning of the facility including not food contact areas. Also discussed the idea of keeping the bones used to make the chicken broth in the pot on the wok bank that holds the broth, so that the bones do not end up in the food prepared wit the broth. Chicken in the top section of the prep station cooler temped at 41F. Beef in the walk in coolers temped at 40F. Egg Drop soup in the steam table temped at 157F.
