Cold-holding temperatures - Dairy walk-in cooler: Hard-boiled eggs 44F, cottage cheese 40F; Meat walk-in cooler: Egg salad 36F, sliced deli turkey 36F. Product thermometers provided (one digital, one manual). Observed proper glove use and hair restraints. Kitchen observed to be kept very neat and well-maintained.

Lunch service nearly complete; observed that products were returned to refrigeration immediately following the end of the lunch period. // Ansul system tagged June 2017. // Salad bar - all foods are discarded at end of meal, per cook. // Walk-in cooler temperatures properly maintained, and all foods properly stored.
