Large fridge near freezer observed to be 34 degrees, large freezer observed to be -8 degrees, and large fridge in kitchen observed to be 42 degrees.

Comments: Sanitize step at 3 bay sink had about 75 ppm bleach solution. Chicken was being grill seared and then going into the over. All refrigeration operating properly. Kitchen was relatively clean for all of the food being prepared. Proper cooling and hot holding was discussed with the chef.

Comments: The date of the inspection was the first date that the kitchen opened and was being used to prepare food for the residents coming to occupy the temporary residence later tonight. The chef was grill marking chicken and hamburgers which were being put on trays and then would be cooked in the oven. He said they will be held there until the dinner service. Chef did not have a stab thermometer but one was found within a minute and will be used.
