Comments: all but 1 food item in the hot holding cabinet were 160 degrees. all refrigeration was at or below 41 degrees. reviewed bare hand contact and washing produce. gloves available and hand wash station acceptable, wiping cloths after corrections made were tested at 100ppm chlorine. quats dispenser tested at 200-400 range. several bass caught in the reservoir were observed in an ice chest in the walk in cooler- the cook was keeping them in refrigeration until he could clean and cook them at his quarters they were removed from kitchen and asked not to be stored there in the future. there is a fire extinguisher in the dry storage area outside the boiler room that was last inspected in 2016, it is fully charged
