Comments: Note: PHI stopped to follow up on corrections to violations cited on 6/22/17. inspection report.to on prior inspection. Pizza prep. unit is currently in use and has a temperature of 41F in the cabinet and 44F on the top bins. Per operator the Pizza Prep unit was cleaned with a thermostat adjustment. Owner had received a new replacement unit approx 10 days ago however unit was damaged and returned to manufacture for replacement. New unit should be received in approx two weeks. The sandwich prep cooler is still not in use and replacement parts to have it repaired are on order. PHI also provided education regarding time stamping for discard of any non temperature controlled pizzas with potentially hazardous food toppings... No current PHF pizzas on display at time of inspection. | ||
