Operator has removed inoperable, extraneous equipment. Slight rodent activity still present. Instruct to clean/sanitize those areas, and have continued rodenticide monitoring by exterminator. Instructed to perform additional cleaning, and maintain routine schedule of cleaning to prohibit accumulation in the future. Storage of hazardous food sources to be maintained in main walk-in cooler, until walls of beer cooler can be repaired/painted.

Comments: Re-inspection for cleaning progress status. Operator has eliminated majority of paper debris, and recyclable cooking oil containers. Modest cleaning has been performed. Instructed to continue with much more thorough cleaning. Operator contacted Bug Off Pest Control for mouse eradication. Scheduled to show up after beginning of New Year. Instruct operator to remove dead mice and all droppings noted, and to sanitize surfaces thoroughly. Continue to clean floors in rear storage area, and have soda machine serviced again, as leak has not been repaired fully; slight improvement, but not corrected. Follow up in 2-3 weeks. Reminded that facility needs to adopt a more continuous and regularly scheduled cleaning pattern, or may be subject to increased inspection frequency and/or notice of violation.

Instructed to clean/disinfect rear storage room, eliminating cardboard boxes and accumulated waste oil containers. Instructed to have soda machine serviced for leakage repair, and to perform thorough cleaning of lines. Contact pest management personnel to deal with ants and mice. Facility needs to perform cleaning on a more regular schedule to eliminate pest attraction. Re-inspect in 2-3 weeks.

Grease is being routinely transferred to collection station outside. Rear storage room is considerably cleaner. All hot/cold holding temperatures are ok. Discussed ice wand sanitization with kitchen staff. Recommend cleaning obstruction in mop sink. No outside disposal of mop water. Also cleaning of upright cooler and ice machine. Bar area and restrooms ok.

Will be learning of availability at that time. Rear storeroom has been thoroughly cleaned, and oil storage is no longer occurring. Glove usage noticed at time of visit. Refuse is being properly maintained.

Comments: Visit due to call with regard to garbage storage and rodent control. Viewed exterior garbage holding room. This is attached to building accessible thru outside door. Exhaust fan grate noted on wall of garbage holding room . This is a vent for an adjacent garage. Garage is used for sundry storage. Per operator, spoke with town clerk 1/6/17, with anticipated receipt of an exterior refuse bin. This is expected to be delivered within a week, to allow DPW to pick up once weekly. Room currently contains 5 garbage bags of refuse, with trash contained in bags. Rear storage room of facility noted with excess fryer oil being retained, amid paper box storage. States fills ~ 6 buckets per week. Has oil collection bin in rear of building which is picked up once monthly. States is ~ 1/3 full at present. Instructed to eliminate standing collection of fryer oil, and to continue discard at a much more frequent interval, thus reducing risks. Recommended flashing strip on rear door if any storage is continued, although states does not intend to return to use once garbage bin is received. Will follow up on delivery of bin, and refuse handling, along with oil discard.
